The initial wheel of Flagship, Beecher\'s signature cheese, was handcrafted in November of 2003. Flagship is a semi-challenging cow\'s milk cheese with a uniquely robust, nutty flavor. It is created with pasteurized milk, very carefully aged for one yr under the watchful eye of the cheesemaker to fully create its complicated flavor and ever-so-slight crumble. At the 1st annual American Cheesemaker Awards in California in 2007, Flagship was awarded \'Best Semi-Hard Cow\'s Milk Cheese\', and in 2009 this gourmet cheese was awarded a 2nd area in the Aged Cheddars Category at the American Cheese Society Competitors.
