Monks of this Benedictine Monastery continue to teach the art of cheese-making to local shepherds. Its rind is naturally gray with patches of red, orange, and yellow. This cheese has a fine, closed texture and is is rich with butter-fat. Local shepherds have made ewe's milk cheeses in the French Pyrenees for 4,000 years. Etorki is a modern cheese dating from the late '70s, similar to traditional Basque country cheeses, but it is more supple and close textured. Etorki takes its name from the Basque word for "origin," or "source." The milk comes from small flocks of black or red-faced Manech sheep and is only made from late December to mid July (when the ewes are impregnated again). From June to September, the flock's transhumance to high pastures to allow the lowlands to regenerate. Etorki is aged from three to six months from fine, cut curd pressed in plastic molds, vertically stacked to press curd and expel whey. After a two-hour brine bath, it is rubbed with salt and later in brine soaked cloths. Etorki is oily with butterfat, yet firm and supple with a burnt caramel sweetness and a creamy texture. This is a full-bodied cheese with a nutty flavor and smooth texture. The cheese is hand rubbed with a Turkish grind of Colorado Legacy Coffee Company's (The Cheesemakers brother) "Beehive Blend". The blend consists of a mix of South American, Central American, and Indonesian beans roasted to different styles. French Superior Lavender buds are ground with the coffee and the mixture is diluted with oil to suspend the dry ingredients in the rub. The rub imparts notes of butterscotch and caramel, which are prevalent near the rind, but find their way to the center of the cheese. The cheese is aged on Utah Blue Spruce aging racks in Beehive Cheese Co's humidity controlled caves, and moved to different temperatures during the four-month aging process to develop texture and flavor. When you take a bite of Beehive Cheese, it melts like butter in your mouth- that's because it's made from some of the creamiest and cleanest milk in Utah, lovingly crafted into specialty cheese by a family who shares a passion for the artisan way of life.
