American-style saag paneer recipe

Use your homemade paneer to try making traditional Indian saag paneer!

Intrigued by the dish Brandon made in the video? Try it out for yourself! This saag paneer recipe is a little less spicy than traditional Indian saag paneer, and uses easy-to-find ingredients. Traditional saag paneer is absolutely fantastic, but it's sometimes a little spicy for traditional American palates. As a result, we've created this easy saag paneer recipe that turns down the heat a little and uses a lot of spices you can probably find in your spice cabinet. It’s likely to become a family favorite!

Ingredients: 1–2 tbsp curry powder* | ⅓ cup ghee | 8–12 oz fresh paneer | 1 lg onion, chopped fine | 3–4 cloves garlic, minced fine | 1” piece fresh ginger, peeled and grated | 2 lbs fresh baby spinach,** chopped, lightly steamed, & drained well | 1 cup thick yogurt | Cooked basmati rice

Steps

  1. Melt ghee in large skillet over medium-high heat. Cut paneer into ½-inch cubes; sauté in ghee until golden brown on each side. Turn paneer carefully to avoid scrambling it.
  2. Remove paneer from skillet, drain on a paper towel and set aside. Leave remaining ghee in skillet. Add onions, garlic, and ginger to ghee in skillet.
  3. Cook, stirring constantly, until onions are tender. Place in blender; blend to a paste-like consistency. Put back into skillet and stir in 1–2 tablespoons curry powder, to taste.
  4. Add spinach to spice paste and gently heat over medium heat until hot. Stir in reserved paneer. Remove from heat and stir in yogurt. Serve over hot basmati rice.

*Want to make your own curry powder? A custom curry powder is a standard ingredient in many Indian households, and this mild mix is a good start (see below).

**Alternate: (3) 10-oz packages frozen chopped spinach, thawed and drained

Curry Powder Recipe

Seeds

  • 2 tbsp coriander | 1 tbsp cumin | 1 tbsp cardamom | 1 tsp fennel | ½ tsp mustard

Spices

  • 1 tbsp whole black peppercorns | 4 whole cloves | 1 tbsp powdered turmeric | 2 dried red chilis

Instructions

  1. Add all but chilis and turmeric to dry skillet. Toast over medium heat till fragrant, but not browned.
  2. Remove from heat and cool.
  3. If using chilis, remove seeds, break into pieces, and stir in now.
  4. Place mixture in coffee or spice grinder and blend till powdered.
  5. Stir in turmeric.

Basically paying for a thermometer ,cheese cloth and citric acid. for $20. You don't even need the citric acid, because lemon juice, lime juice and even vinegar will do the trick to curdle milk (go on Youtube).
