The title Raclette signifies \'scraper\' and refers to a group of gourmet cheeses which are melted to make a conventional Swiss dish of the same identify. These are mountain cheeses made initially in the Vallais area but are now made during Switzerland. Although the French also create a fine Raclette, we believe that the traditional Swiss Raclette cheese is superior and demanding of your choice. The texture of the Raclette is extremely smooth and it would seem to melt in the mouth even without heating. The aroma is strongly reminiscent of the farm with a mixture of fruit and wine aromas. The taste is usually equally strong, with rich wine-like notes, and a tangy accent.
