A accurate masterpiece of American cheese-producing. Made like fresh Monterey Jack and more aged for another seven to ten months. Firm, pale yellow with a sweet nutty taste. Tom Vella began manufacturing in 1915 in Sonoma and production has not slowed considering that. Wheels are even now hand formed and contain vegetable rennet rather than animal rennet. It is characteristically dark brown rind is a result of a safflower, unsweetened cocoa powder, and black pepper rub which allows for an uncracked, evenly aged completed cheese. This cheese is effectively suited for the two reds and whites, an extra bonus from its properly balanced flavors.
